mung salad (faux tuna).

6-8better than tuna. perfect if you need a wonderful high-raw sandwich filler! you'dve never guess citrus pulp is in this!
Ingredients:
1c organic, raw sunflower seeds
1/4c clementine pulp from juiced clementines
1/4c
rejuvelac
1/4c mung beans, sprouted 2days
2T Braggs Liquid Aminos
2 stalks organic celery, diced
1 garlic clove
fresh
dill
pinch of sea salt
Preparation:
combine all ingredients except mung beans and celery in the food processor. blend until smooth and creamy but still has some texture. stir in the celery and mung beans & enjoy (a little at a time!)

i actually made this last night and substituted sunflower seeds (raw unhulled and not sprouted). it tastes just as great~!

would this recipe work if i substituted sunflower seed sprouts, lentil sprouts, or garbanzo sprouts, or is there something just special about mung sprouts?
