I have an overwhelming amount of mulberries in my backyard and was searching the internet for some recipes. I came across this one which is a salsa that was designed to go over lamb chops (YUCK!) and I realized that hey that salsa is RAW, awesome! Sounds like a good way to use up excess mulberries!
1 cup mulberries, stems removed
1 cup melon, such as cantaloupe, diced
2 serrano chilies, seeds and stems removed, minced
½ cup red bell pepper, diced
1 medium onion, chopped fine
½ lemon, juiced
3 tablespoon olive oil
1 tablespoon parsley, minced
1 tablespoon cilantro, minced
Chop all the ingredients as suggested above. In a bowl, combine the mulberries, melon, chiles, red bell pepper, onion, lemon juice, oil, parsley, and cilantro and mix well.
