Mock Tuna Salad

Depends on the amount of pulp you use.

A raw restaurant near me serves this delicious mock tuna. They use the carrot pulp left over from juicing. Unfortunately, I found out that it’s not really raw, as they use Vegenaise. So I searched around and found some alternatives. If you have a good juicer that really dries the pulp out, the consistency is spot on.

Ingredients: 

carrot pulp, left over from juicing
raw mayonnaise
whatever you want to add

Preparation: 

After taking your pulp out of the juicer, add mayonnaise (recipe below), and whatever you want to add as far as veggies go (celery, scallions, etc). Then add spices to taste (cumin is great for a curried version). This is a nice, light mock tuna that tastes great on greens or in a wrap.

Mayonnaise

Blend (I use a mini-prep FP, but a blender would work) until smooth:

  • About 1 cup cashews
  • Water (eyeball it to get the consistency you want)
  • ½ lemon, juiced
  • 1 small garlic clove
  • ½ tsp salt
  • Apple cider vinegar to taste
  • Olive oil (if desired) to taste

(Store in a glass jar in the refrigerator for a week.)

I have some vegenaise, but I'm not 100% raw anyway (just started again after a long hiatus..aiming for 80% or thereabouts).

This was really good - surprisingly good :) I guess i'll have to start juicing more carrots!!! I added onion and celery to mine and it was really good. A bit on the sweet side b/c of the carrots, but still really good! Oh, and I forgot the dulse... but, it was still good. More like a Salmon Salad b/c of the color. Yum!

This was so good! I made my first ever batch of bread (onion bread) and had a "tuna" sandwich just now. It's kind of creepy how similar the texture is to tuna!

I have found that I'm not too fond of cashew based things, so I used the mayo recipe that Kandace refers to in her comments above (almond based), and thought this was just great! With some of that amazing mayo, a good amount of celery, a sprinkling of green onions, and extra salt and pepper to taste and I couldn't believe it was carrot pulp. The next time I'll try a dash of AVC and maybe throw in some chopped red onions and possibly some cucumber. Yay for a really great addition to my recipe file. Sure, grating them would work just fine! I'd recommend lining a colander with paper towels and putting the grated carrots in there so they can dry out a bit. :)

I do not have a juicer. Would there be ANY WAY to prepare the carrots without a juicer? Has anyone tried it like that? Maybe grating very small?? I have sampled a raw tuna dish from the Soul Food cookbook as the author's dad (I think he too) is from where I live and was at a local HFS here and sampled it. It was yum.

Very easy.. and delicious! Made carrot juice the other day, glad I saved the pulp. I have some vegenaise, but I'm not 100% raw anyway (just started again after a long hiatus..aiming for 80% or thereabouts). Mixed in some organic garlic powder and nori granules. Excellent! So glad to have a use for carrot pulp!

Hi RawVee: Gone Raw concentrates on raw, vegan recipes. However, one can be raw and not vegan (for example, raw honey isn't vegan, but many folks use it in their raw recipes).

I made this with "real" (egg-yolk-based) mayonnaise (also 100% raw) mixed in with carrot pulp, celery, parsely, minced tomatoes and minced green pepper and it was delicious! Thanks for the idea!

This was quite good. I didn't know the ratios, but I just made it like the carrot pulp was the tuna and just mixed some celery, green onions and home made mayo and I just heaped it all on top of a bowl of greens. I was very satisfying. Thanks.
