If you love a good apple/raisin/coconut/walnut combo, you're in for a treat.
All aboard....next stop is Yum City!
1 cup oat groats (pre-soaked in the fridge overnight, or at least 8 hrs., and then drained)
1 apple, peeled and cored (I adore Granny Smith, but any tart apple will do)
1/4 cup raisins (or more or less to taste)
1/2 cup shredded unsweetened coconut
1/3 cup walnuts, chopped
Agave, to taste
Cinnamon to taste
In a food processor, chop the oat groats until they resemble a coarse oatmeal...but don't pulverize the mixture, you want texture!
Then, cut your apple into quarters (if you haven't already done so to core it), and then cut the quarters in half (the reason being, you don't want to over process and end up with microscopic apple bits). Throw the apples into the oat groats, and add cinnamon. Pulse the mixture enough to chop the apples finely, but make sure that you can still distinguish them in the mixture....you want to taste them!
Remove from processor and in a mixing bowl, add the raisins, coconut, walnuts and agave. Mix 'er up, and there you go! A delicious start to your day, or just a wonderful treat.

I tried this today. I didn't have an apple, so I used mashed banana. It was so tasty and so filling. I can't wait to eat it again.
really good. just had it for dinner. this mix of raisins, coconut, cinnamon, walnuts and apples seems to go perfectly well together.
It IS delicious! It definitely gives you that good 'ol oatmeal feeling.
The oat groats do get quite soft when you soak them for the allotted time....I was actually surprised at how much!
I bet it would be even better if you warmed it in a dehydrator......alas, I don't have one, but I bet it would taste great.
This looks delicious! I guess oat groats will soften when soaked? I haven't tried doing that yet - but I need to! Oatmeal has always been my favorite!
This sounds yummy! I love raw porridge even more than cooked porrigde and I adored that.
