Mild Cashew Mayonaise

Makes almost 2 cups

Based on the “Cashew Mayonaise” recipe from this site; I just adapted it for my taste. Many thanks to Goddess Leonie for the original!

Ingredients: 

2 cup raw cashews
1 clove garlic, crushed
1 lemon, juice
2 teaspoon Nama Shoyu
1 teaspoon paprika
1 teaspoon salt
water, as needed to help it blend.

Preparation: 

Put all ingredients in blender and blend until creamy, adding water as needed to help it blend. Refrigerate until ready to use. I used it to make my Mayonaise Vegetables/Red Cabbage Slaw Delight. Let me know what you use it for!

carrie6292 - Sorry I didn't see your question before! Yes, I've made mayo with pine nuts - haven't tried them in this recipe, though.

Has anyone ever tried making a mayo w/o cashews? I don't like to use them.. would sunflower seeds or pine nuts work??

LTMeadows - That's good to know - regular mayo has vinegar in it, so that would probably be a good flavor match if you like regular mayo. No, they are probably not the same; there is also apple cider vinegar that is not raw- Bragg's makes raw apple cider vinegar.

Apple cider vinegar is the type that I use when making it... um, doesn't say RAW apple cider vinegar on the label... just apple cider vinegar... not sure if they may or may not still be the same.

Update - Coco Nectar vinegar says it is unheated. I tried it once last year; it was really strong & a unique flavor - now I want to get some.

Unless you use raw apple cider vinegar - it's the only raw one I know of. Anybody know if coconut vinegar is raw?

LTMeadows, no, vinegar isn't raw, but it would work well for my sis-in-law who wants to eat healthier but loves the taste of vinegar in salad dressings - thanks for the tip!

I've made cashew mayo before and really like it. I however "cheat" and soak my cashews in vinegar first (not sure if vinegar is raw or not). This helps it keep/last much longer. I also add a bit of onion and honey (agave should work just as well if, like me, you like you like it with just a bit of sweetness).

Shutter Nutter, I'm glad you liked it! This is the first time I have made the mayo, but similar cashew concoctions usually don't last longer than about three days. Use it as fast as you can, and just taste it before you put it in something :)
