Mexican Veggie Supreme
A delicious, fresh tasting mexican salad. Add any fruits or veggies you have on hand. Also delicious in raw tortillas or in lettuce cups.
1 avocado, diced
2 tomatoes, seeded and diced
1 cup watermelon, seeded and
diced
1 cucumber, peeled, seeded and diced
1 red pepper, seeded and diced
1 small red onion, diced
2 celery stalks,
diced
10 radishes, diced
2 clove garlic, crushed or minced
1 ear of corn, cut off cob
1 jalapeno, seeded and
minced
1 small bunch of cilantro, minced,large stems removed
2 limes, juiced
1 teaspoon ground cumin
olive
oil
salt
freshly ground black pepper
prepare the tomatoes, cucumbers, garlic and onions first. salt them lightly and allow them to rest while you prepare the other ingredients. Once all the veggies and fruits are prepared, toss them together in a large bowl. dress with lime juice, olive oil, cumin, salt and pepper.
it’s delicious right away, or after marinating for a couple of hours in the refrigerator.

the watermelon was an accidental addition. i was at a potluck and had brought this salad. it was on my plate next to a fresh watermelon salsa. they tasted so great together, i had to make it official!
another delicious addition is mushrooms that have been dehydrated a few hours and then diced. They soak up all of the delicious flavors and add a great texture.
