Mexican Spanish Rice!! Que Rico!!
Delicious Raw Rice Recipe w/a kick! Use as a yummy side dish, tossed on salads or on nori rolls!
4 Parsnips
½ cup Raw Pine Nuts, soaked for 4-6 hours
½ cup Sundried Tomatoes, soaked for 4-6
hours
1 teaspoon chili powder
1 teaspoon Celtic Sea Salt or Adobo
2 tablespoon Cold Pressed Olive Oil
½ 1/2 of a Red bell
Pepper
3 Cloves Of Garlic
1 red onion
dash Black Pepper
¼ cup Cilantro, minced
1 Lemon,
juiced/squeezed
Shred the parsnips in the food processor, take out & pour it in a bowl.
In the processor, Add drained pine nuts, sun dried tomatoes, sofrito for 5 seconds
Mix it in the bowl w/ the parsnip rice..
process onions, red peppers & garlic.. then add to the mix, along w/ olive oil..
salt & pepper
Add chili powder, then squeeze a whole lemon in there..
stir it up & leave in fridge for 1 hour..
FANTASTIC as a rice replacement on nori rolls or side
dish!

they are a bit spicy like carrots, but put in with all the ingredients gives it a bit of a ricey textutre... Amanda and i LOVE mexican dishes and when she would visit FL, we would do mexican... Try this its great!!!

Mmm, sounds delicious! I will try it tomorrow with an orange squash I bought today, and replace the pine nuts with almonds... let you know how that works out :))

I LOVE Parsnips and was trying to think of how to use them raw as they'll be in season soon,.. I've only had them cooked (theyre great with honey/maple syrup & wholegrain mustard).
Question though.. what does 'sofrito' mean, ie 'sofrito for 5 seconds'..?

Oooooh! a Mexican dish! I love Mexican dishes. I've never tried parsnips either TheRawDance. I guess we'll be testing it out together. Whoever tries it first must post. I'm in no hurry though...I just grocery shopped.

(I would really like to try these in my squash blossom burritos!) I think I may bite the bullet and buy some parsnips at the farmer's market tomorrow!

You have done a beautiful job. Parsnips are one of the things I have not tried. I heard they are like a carrot but different. How do they taste?
