Mayonaise Vegetables/Red Cabbage Slaw Delight

Serves 2, or just one if really hungry!This was so good I just had to post it right away! My son came up with the first name for it, and my dad the second. I just wanted to eat it all!!!!
Ingredients:
2 cup red cabbage, shredded/sliced thin
2 tomatoes, diced
2 avocados, cubed
.66
cup my Mild Cashew Mayonaise
½ lime, juice
.125 teaspoon mustard powder
½ teaspoon salt, or to taste
½ teaspoon black pepper, or to
taste
Preparation:
Put the shredded cabbage in a mixing bowl. Put the Mild Cashew Mayonaise on top, and add the lime juice, mustard powder, salt & pepper. Stir all together until the dressing is mixed and the cabbage is well coated, then stir in tomatoes and avocados. Enjoy!

yes...i made something similiar with the avocado turning so i found i had to add only enough avocado for the amount of salad I ould eat and then add more to leftovers later

yum..just made something similar!! sounds so good. I found the avocado turned brown if i had left over. I'll have to check out your cashew mayo recipe..is it on your profile? I will look ;) thx

I personally like it with more lime & pepper for more of a kick - adjust it to suit your taste.

I took this to a very non-raw family dinner (when deciding what I should bring, my brother was on the phone asking if I had any juice with sugar in it!) I took this salad, and everyone really liked it! I've gotten good at not telling them exactly what's in my food until after they have tried it ;) Cashew mayonaise would put a lot of people off!
