I find that while some cauliflowers are bitter, others have been just fine. Adding more salt helps remedy this. I actually found that the purple cauli was more bitter than the white...tasted like I put horseradish in it! Writeeternity, I always put a couple tbsp of hemp seed in my mashed cauli, and even though I'm used to the taste of hemp I don't even notice it in this recipe.

Maybe you should try making this in Vitamix.. It is what I do... I usually make this dish with mac nuts, but a nut-free version is always welcome! Wanna try this :)

I'm sorry but we had to drown this in mushroom gravy to eat it at all and the fiance still barely touched his. I'm still avoiding the leftovers two days later. We used hemp seeds and white cauliflower for ours. It tasted very sharp and bitter. I tried adding some macadamias but that only helped a little, I tried adding miso too but again we couldn't get rid of the taste despite our best efforts.

i would suggest cutting up the cauliflower and dehydrating it slightly to soften it abit. When u whizz it in the FP, add a little lubricant such as olive oil and perhaps some prepared cashew butter (almonds if u dont use cashews) for richness.

hm raw cauliflower is so hard, do you soak it first? or maybe i just bought something bad? i'm having SUCH a hard time trying to break it up to put into the food processor, so frustrating! :/

I had tried a couple of other cauliflower recipes this week that I ended up tossing out straight away. Totally disappointed, I was just going to throw out the half I had left sitting in the fridge when I came across this recipe. Mmmmmmmmmmmm, delish!! This is a keeper with the added garlic and EVOO.

When I grate cabbage finely on a stainless grater, I notice a distinct flavor change. So it must be somewhat the same with cauliflower. I just thought I was crazy. Well, I am, but not as much as I thought. Thanks for the post.

Oh my goodness!! I LOVE THIS RECIPE!!! Except that I used about 4 large garlic cloves and it was super strong for me!!!!! Good thing I didn't add any black pepper or else I would have cried all evening out of the spicyness! I also added tamari instead of salt and I used tahini as my 'seeds'. I loved it so much!

Oh and as a note, TRY USING IT AS A DIP FOR CARROTS!! ITS GREAT!

permutations...I thought it was just me, lol. I love raw cauliflower however it always seems to have a "green" taste, slightly bitter, when it's blended. I wish I knew why!

I find cauliflower to be unpleasantly bitter when it's blended smooth in a food processor. I've tried it a couple times, and to me it's unedible - even when it's a good cauliflower that tastes good to me in it's unblended state. I don't know what makes the difference.

Just made this.. but a bit differently. I used about half a medium head of cauliflower, 2 lg cloves of garlic, ~2 T olive oil, and a large dash of black pepper. This was the first time i've made it.. mmm it's so good! FAR better than ANY mashed potatoes i had ever eaten.

Were your pumpkin seeds raw, soaked and do you prefer them to other seeds? Have you ever had hemp seeds? I'm curious as to what they taste like.
