Marinated Zucchini and Mushrooms

Makes 6 to 8 servings

This recipe is from Publix GreenWise Market magazine

Ingredients: 

2 tablespoon lemon juice
1 tablespoon extra virgin olive oil
1 tablespoon shollots, finely chopped
2 garlic cloves, minced
1 teaspoon fresh oregano or 1/4 dried , fresh-chop, dried crush
¼ teaspoon salt
.125 teaspoon ground black pepper
1 small summer squash
1 small red sweet pepper, cut into square pieces
1 small zucchini
1½ cup mushrooms, whole

Preparation: 

In small bowl whisk together lemon juice,olive oil,shallot,garlic,oregano,salt and pepper;set aside. Using a vegetable peeler, shave off long,thin strips of zucchini and yellow summer squash. Set a resealable plastic bag in a large bowl and place zucchini,summer squash,mushrooms and sweet pepper in the bag. Marinate vegetables in the refrigerator for 8 hours or overnight, turning bag occasionally. To serve, drain vegetable, reserving marinade. Arrange vegetables on serving plates or a serving platter;drizzle with reserved marinade. Enjoy!!!!

This marinade taste like artichokes, very tasty. I can't wait to see how good it is tomorrow. I also added carrots because I was out of squash.

Ardesmond2-check into coriander roots or possibly increasing the amount of shallots. I hope that helps, good luck. If anyone is interested in viewing the pic it's at publix.com/greenwise
