Luv's Curry Pate
Servings:
Serves 1-2 Depending on how hungry you are!

This is a very delicious pate that is quick and easy to make. It’s very filling and satisfying and can be used lots of different ways. (Suggestions: on a bed of grated vegies or greens with chopped tomatoes on top; as a dip with raw chips, crackers, or vegie slices; or as a sandwich on dehydrated bread or rolled up in a collard leaf)

Ingredients:

1 cup Walnuts, Chop in food processor.
5 Sun Dried Tomatoes, soak for 30-60 min.
½ teaspoon Curry Powder
½ teaspoon Cumin Powder
½ Carrot, Scrub and Chop
Salt to taste (This will vary depending on how salty your Sun Dried Tomatoes are)

Preparation:

Put all ingredients in the food processor (I use a 3 cup FP for this – mine is a Cuisinart Mini Prep Plus – I like this one because it has forward and reverse.) Process until it holds together. Serve in desired manner. ENJOY!

You can also add about 1/4 cup red bell pepper, a little chipotle, a few cherry tomatos or some fresh herbs. Have fun with it. :)

This sounds delicious! I'm going to try it with half pine nuts and half walnuts for that extra creamy flavor! yum! And maybe some fresh cilantro, too..
