Lighten Up Taco Meat
This is a variation on Kandace´s gorgeous walnut taco meat. It is perfect for anyone who is feeling nuts and seeds are a little too heavy on their own whether due to taste or like me if you´re trying to slim down ;) Obviously feel free to play with the spice measurements. I LOVE cumin and garlic, so I use tons. I usually use a dash of nama shoyu but I was out today so I used a pinch of salt.
½ cup pumpkin seeds
½ cup lentil sprouts
2 teaspoon cumin
seeds
½ teaspoon cayenne
½ teaspoon oregano
½ teaspoon salt or nama
2 clove garlic,
minced
1 teaspoon apple cider vinegar or lemon juice
Put all ingredients minus sprouts into blender or food processor. Blend away until seeds have been almost ground. Some pieces are okay. Add sprouts and blend some more until it is a uniform, slightly crumbly texture.
I served this with salsa and sliced avocados on a bed of grated carrot, grated zucchini, grated sweet potato and finely chopped cabbage. It was beautiful. Even my non raw hubbie loved it :)
