Light Breakfast Oatmeal

A nice lighter breakfast for the weekends or anytime. I use Alissa Cohen’s really raw oats and they are nice raw and amazing if you do cook them once in a while. This concoction is similar to my cooked version of oatmeal before I went raw. This raw version is perfect when having cravings for a good old fashioned bowl of oatmeal.

Ingredients: 

1 large apple unpeeled
1 tablespoon ground up flax seeds
½ cup Really raw oatmeal (rolled oats)
1 Stevia packet (or a couple dates)
cinnamon to taste
1 pinch nutmeg
1 capful of vanilla extract
sprinkle a few chopped walnuts (optional), leave out for lower fat!

Preparation: 

Soak the oats with warm water for about 20 minutes or so. Process everything together in a food processor except the walnuts. Sprinkle walnuts on top if you choose to use them.
