Lavender Banana Pudding

Serves 2My lavender has just come into bloom and I couldn’t wait to use it! This was a lovely dessert but would also make a great breakfast. I like it quite sweet but you can skip the dates if you like.
Ingredients:
2 small or one large banana, fresh or frozen
½ cup raw cashews
2 tablespoon fresh lavender flowers, separated
from stem
2 dates, pitted
1 teaspoon alcohol-free vanilla extract
½ cup water
Preparation:
Throw everything into a high speed blender and blend until smooth and creamy. Garnish with a lavender blossom if you like.

I planted lavender two months ago but the flowers aren't growing. :( it's just leaves.

gorawmom - we LOVE eating flowers, especially lavender in puddings or cookies or a sweet bread. If you have any daylilies you can try putting a spread or nut cheese on the petals, or you can throw nasturtium blossoms on a salad for beautiful color and a peppery taste. So glad it's summer. Just make sure they're organic.

This recipe makes me want to plant some lavender! I would love to see more "flower recipes!" Quite intriguing!!! :)
