Kurdish Kookies

Aprox. 1 dozen bite sized cookiesAfter making my first nut milk I didn’t know what to do with the pulp.. so using what I had in the fridge at the time I made this “kookies”. I don’t have a dehydrator so I used the sun… it takes a bit longer but it was worth it in the end.
Ingredients:
1 cup Cashew pulp, Leftovers from nut milk
6 Majool Dates, Pitted and halved
1 teaspoon Cinnamon
Preparation:
- Put nut plup into food processor
- Add dates
- Blend for about 30 seconds until just starting to form a paste (you may have to add a little water to make it a bit sticky)
- Add cinnamon
- Blend again until well mixed
- Roll a tablespoon amount of mixture into a ball (wet hands are best)
- Place on dehydrator tray (or regular tray if using the sun)
- Flatten to desired thickness
- Dehydrate until the middle is soft and outside is a little dry (2 days by sun, No clue by dehydrator)

I made this with walnut pulp and they were really good! My hubby LOVED them and he doesn't usually like the raw food stuff I make. He actually ended up eating them all... I just got a nibble. :( But I will definitely be making these again.

These cookies went over so well with my non-raw-in-laws that I've decided to follow-up this recipe with a sequel. But this time I'm going to try walnuts instead. This recipe is so simple to make (probably cause I'm still a beginner non-cooker) but when it was done it tasted great and really satisfies a sweet tooth. I'd love to hear about any changes/add-ins that anyone does and how they turned out..

Such a great idea! I tried to make walnut butter with my leftover mush (walnut milk is de-lish, but the way...) but i never could get the consistency right. Cookies sound way more fun :)
