Kopy Kat Kale Salad (inspired by Russel James but different)

Dressing is enough for 3 salads.

This past weekend I made Russel Jame’s wilted kale salad from this website and it was lovely. He uses 2 Tablespoons of salt to wilt the kale but I only used a fraction of that amount. I made this tonight and it’s the quick version of his salad with some modifications. I ripped up enough kale for my lunch tomorrow but made enough dressing for 3 days. Tomorrow night I’ll rip up more kale and cut up some veggies and use the dressing again. This seems great for mid week. Not too heavy but enough good stuff to get me through my work day!

Ingredients: 

SALAD STUFF
1 big serving of kale (I use the flat leaf)
1 handful of cherry tomatoes cut in half
1 tablespoon (or 2) of hemp seeds
2 tablespoon pumpkin seeds
(any left over veggies in the fridge), optional :-)
DRESSING
1 Avocado
1 chipotle dried pepper (not raw since it's smoked), optional
2 sundried tomatoes (not soaked)
¼ (or more) of a yellow pepper
1 tablespoon Agave syrup (or a couple of dates)
4 tablespoon olive oil
juice of one lemon
sprinkle hot pepper flakes
water - just enough to make it creamy
salt to taste
ONE MORE SALAD ITEM (should be above)
*handful of sunflower sprouts*

Preparation: 

I ripped up the kale (didn’t use veins) and mixed with other salad components in my container I’ll take to work tomorrow. I sprinkled some salt to soften up the kale (I went lightly on the salt). For the salad above I also added sunflower sprouts which taste lovely with this mixture (I couldn’t seem to insert it above)

DRESSING:
I blended up all ingredients in the Vita-mix until creamy. I then scooped out 1/3 and mixed it with the kale medley. I then saved the rest for the next 2 days. My avocado wasn’t super ripe so it should last that long. However if the avocado is rather ripe, it may only have a life of 2 days.

ardesmond2 - this would go nicely with your pumpkin seed taco meat wrapped in collards, especially since both recipes share similar ingredients. I made the taco meat last weekend and it was really yummy. I ground up a bit more pumpkin seeds in my spice grinder since I didn't soak everyhting long enough (too hungry to wait) but all in all it was lovely. Even the picky husband approved!

Next time I may add more yellow pepper. It's very similar to Russel's but less avocado and salt. The new ingredients which made it feel different are the yellow pepper, sundried tomatoes and hot pepper flakes, oh and the sunflower sprouts! Those little sprouts rock! I could live on kale salads with avocado based dressings! Even just a simple salad of kale, mashed up avocado, olive oil and a bit of salt is very tasty!

Kale is the king these days for me :-)

After I made the dressing, I scraped out the Vita-mix and didn't wash it before I made my evening green smoothie. I added a stevia packet, used an apple and a big handful of spinach. Wow it was good! It had a kick to it from the hot pepper flakes and chipotle!
