Kanape sandwich

Those are litttle supper easy things. You can have it as a fast snack or addition to your soup or a nice party food if you decorate it with vegie pieces stick on tothpicks.
Ingredients:
zuccini
avocado or any patte, hummoss or salad dressing
small tomatoes, cucumbers
chopped scalions or other herbs
ground black pepper
Preparation:
Cut slice of zucchini or you can use some other summer squash.
Cover with very thin avocado slices or thin layer of any pate or sauce. Sometimes if I don’t have anything of those I just go
without it.
Top with tomato or/and cucumber slice.
Sprinkle over with scallions or other herbs or I like to put on a top extremely thin onion slice.
Sprinkle tiny bit of black pepper over it. You can add salt if you use it.

Thanks! I am back on looking because I am actually going to make them right now lol! My girls just got done devouring little veggie flower towers (on bread, but hey, it was veggies lol) They came out beautiful, with tomatoes for color! This was great grasshopper

This is a great idea! I love making little "sandwiches" by spreading a sun-dried tomato pesto between two slices of cucumber.

Wow! Now that is just simple dimple, just what I like! Thanks so much, I see lunch coming on! I imagine cutting the zucchini with a cookie cutter like a flower and doing the same withthe tomatoes and cucumbers and stacking them like pretty colorful towers! OH, and with a bit of "Mayo" on it and a sprinkling of sea salt. OMG I am so hungry right now lol.
