Kale Chips (AKA - Green Monster Chips

Kale Chips (AKA - Green Monster Chips
Servings: 
4 kids

Wonderful little curled-up crispy chips that kids and adults will go crazy for! The credit for this recipe goes to Dr. Ritamarie Loscalzo of eLivingHealth.com.

Ingredients: 

1 head fresh kale, wash and remove center stem/vien
1 teaspoon sea salt
1 teaspoon raw agave nectar
½ teaspoon sea salt (again)
large container for soaking

Preparation: 

Cut the pieces of kale into palm-sized segments. Place them all in large container and fill with water. Toss 1 tsp. sea salt into water. Bruise the kale with your hands for about a minute. Allow to sit in salted water for about 30 minutes. Drain well. Toss with agave nectar and remaining 1/2 tsp. Lay the leaves on mesh dehydrator screens. Dehydrate at 115 degrees for about 8-10 hours.

I do recommend eating these outside as they make a HUGE mess. My kids usually eat the entire container in one sitting. They are yummy, and a great way to get more greens in. I have also added herbs before (dried oregano and basil) which gave it an almost pizza-type flavor.

f1shcakes - I think YOU have funny tastebuds, ha ha! But I detest brewer's yeast ;P But seriously, I am more of a savory person too, and I think chili powder and lime sounds good. I've made these with just herbed salt and I loved munching on them as I drove down the Pacific Coast Highway, killed the whole bag in no time at all. They are the perfect foil for chips: salty, crunchy and really really good for you!

Wow, you people have some funny tastebuds ;P Ok, I've only been raw for 2+ weeks now, but gave this a shot in my new dehydrator (which is awesome!). I think they're pretty good though, 7.5/10. Maybe I need a little more salt, less sugar. I think next time, I'll try them with some salt, brewers yeast and lime. I'm more of the savory persuasion. I tried just dredging some bell pepper slices in yeast, and that's pretty yummy!

Oh. My.Goodness. This are absolutely AMAZING!!! What a flavour! Crunchy at first, but a little bit chewy too...tastes like...pumpkin seeds...brocolli...hm, I don't know, but I am just completely in love with these. I'm on my way to buy some more kale and I'll be sure to have a batch constantly dehydrating. Without doubt my favourite raw recipe so far. Just thinking about these makes my mouth water. And I really needed to get the greens in me, too--I would go for the sweet, sugary fruit smoothie instead of a green smoothie any day...Thank you so very much!

Hm, raeleann, what kind ofdehydrator do you have?
Aw, I have to bruise the kale? :( I feel bad. lol.Wow, I just popped these into the dehydrator.This makes a HUGE BATCH!! More than half of it didn't fit into my dehydrator. I'm looking forward to some crispiness, I've tried a bunch of raw 'chips', and they've all just turned out leathery, which is disapointing. Can't wait for this one! Great way to add greens to the diet!

help!!! I am trying to make the monter kale chips. They’ve been dehydrating at nearly 115 for over 12 hours and aren’t crispy at all. They just seem wilted and shrinking.

Any suggestions? Do I risk getting bacteria or something on the kale if it is in the dehydrator forever? the kale just looks wilted now.

Last question: I thought things needed to be dehydrated at 110 or lower to maintain their enzymes?

Any assistance you can provide would be greatly appreciated. Every recipe I’ve tried I’ve had dehydrator problems. Nothing turns out crispy. And I seem to have to leave it in for much, much longer than the recipe states.

WOWOWOWOWOWEEEEEE! If you are looking for a super dooper replacement for chips, search no more! These are fantastic! One bite might taste salty, the next bite sweet, and super light and crispy...what an awesome way to get healthy greens into your diet daily :) I took them to a dinner this evening and they were GONE LOL! Thanks for the recipe, will make these weekly :)

Maybe humanimal means to make certain it is raw. Many people purchase the non-raw variety making the assumption... It is lower glycemic than honey and some other alternative sweeteners. However, even if that is your primary concern, it is only 1 tsp. for an entire bunch of kale. Really, even 1/2 tsp. would be OK.

So glad you all are willing to try it. I look forward to hearing what you think. My kids go crazy of this stuff - I must admit, so do I...

Humanimal, why watch out for agave? I've been told that it is lo-glycemic and is a natural sweetener, much better than sugar, sucanat, honey, dates because of the lower/slower blood sugar issue.

I've been craving something crunchy, what better to munch on that kale? I'm currently soaking the kale for these. Think I'll add a little cayenne or chinese five spice. Thanks for the great recipe, Anna!

I have made something very similar with other greens, but my favorite by far is baby bok choy. Mmmmm... The cashier at Trader Joe's gave me some funny looks when I checked out with 9 heads of baby bok choy (but then we traded chip recipes, so I guess it worked out.) :-)
