Recipe Directions

1. If you freeze your persimmons whole, just run them under water for a few seconds or immerse in a bowl of slightly warmish water. The skin will literally peel off with absolutely no hassle whatsoever. Not like peeling frozen bananas. ;)

2. Put the ingredients in the blender or food processor and process away. It shouldn't need any extra liquid, I think it would take away from the gorgeous texture.

You could experiment and add more pumpkin pie spices. I'm sure it would work beautifully as persimmon has that autumnal taste to it.

I suppose you could use frozen bananas as well, but I think they add an extra creaminess that I wouldn't want to tamper with.

I bought persimmons, kaki fruit, last thursday on the market and I was thinking on doing an ice cream. I will try your recipe, but I think I will froze the bananas. I do not like to pure or process fresh bananas as they become brown, oxidate, very easily, but it will definitely add extra creaminess like an soft ice cream. Thanks for sharing your ecipe with us.

i just bought 2 big ripe kakis. they were so soft and after taking a walk with them they almost got smashed in my bag... thats why i put them in the freezer right away. i will try an ice cream, thanks for this great idea!

Wait until they ripen and then freeze them. Part of the ice creaminess comes from blending the frozen permimmons.
