Jalapeno Corn Chips (*** awesome)
I got this from Penni Shelton at realfoodtulsa.blogspot.com and she says they’re from Real Food Raw World by Sarma. So I am giving credit where credit is due: they are amazing and wonderful with a pineapple salsa. They fill up 3 trays in the dehydrator—and make a fair amount of chips, but since we go through them so quickly (they’re that good) I recommend doubling the recipe.
NOTE: **I put both blender and food processor because I have made this successfully using both appliances.
3 cup fresh corn, from about 3 ears, or use frozen, thawed sweet corn
1½ cup red or orange bell pepper, roughly chopped
½ cup onion, roughly chopped
¾ cup flax seeds, ground
½ cup hemp seeds (optional), ground
1 tablespoon fresh lime juice
1 jalapeno, seeds removed
1 teaspoon chili (mild) powder
2 teaspoon fresh whole cumin seed, ground
2 teaspoon sea salt
1. In a food processor, chop the corn, bell pepper, and onion until smooth. Add the remaining ingredients and process until just combined.
2. Using an offset spatula, spread the dough thinly onto three 14 inch Teflex lined dehydrator trays. Dehydrate at 115 degrees for 6 – 8 hours, or overnight. Flip the sheets over onto the tray and carefully peel away the liners. Break or cut w/ a pizza cutter into chip shapes. Place back in the dehydrator for 4 – 6 hours, or until crisp. Store in an airtight container for a week or two.

oh my....so good, I am scarfin some right now- a little spicy with the jalapeno and I love it!!!! The other ones I made were not good. But these, are a treat!! thanks!!! Thin is best I found, some parts are pretty thick and harder to chew, just a thought for anyone making them.

Thank You!!! I just made some simple corn chips- well thay are still dehydrating! But they just have some garlic powder in them cause I love my chips and salsa, looking forward to this recipe!!

If you use frozen corn then it wouldn't be considered raw, would it?

This recipe is most excellent! I use it to make tostada shells, then load them with jalapeno cashew sheeze, sweet chili sauce (this site), and guacamole.

Oh, I'm so glad everyone is enjoying these -- I love them -- and will soon try using them as they were meant, as a taco shell, but I must say that I will keep the jalapeno in them. It's just too good!

These puppies are in the dehydrator and they are making my apartment smell incredible. While I usually only "accidentally" eat the predehydrated cookie and brownie "batter," these almost had the same fate. Delicious recipe, sure to be even more delicious one they're done!

These ARE amazing. Your friend is right. This is Sarma's taco shell recipe. I love the addition of jalapeno. The smells filling my house are delicious! A perfect time for this with sweet corn coming in season, My jalapeno pepper plant is birthing 3-5 peppers daily. There isn't a corn chip better than these. They are actually pleasing to the eye as well. Some I have made have turned a purplish hue from the flax. I did double the recipe and still had just 3 trays of deliciousness. I also used 1 C ground flax only and no hemp. They're almost done and I won't be sharing on the 4th! Just me , my chunky salsa, some guac.,these chips and the band at the pool.5 stars, Sarma!
