Incredible Salsa

Craving salsa?

We were too.

I made a batch last night.

I made a version of this last summer with my garden tomatoes. I have only been raw for 18 days...HIGH RAW I might add!
This time I didn't put the tomatoes in boiling water for a minute to remove skins - and it didn't seem to matter...it was still AWESOME!

Ingredients: 

6# Roma tomatoes (I used 8-10 large)

3 T. fresh garlic

1/4 cup fresh lemon juice

1 1/2 T. Real Salt

1 tsp Cayenne Pepper

1 1/2 tsp. ground cumin

1 red onion

1 yellow onion

2 cups cilantro, stems removed

1/4 - 1/2 # jalapeno peppers. (I used 3 or 4 and kept the seeds from all but 1 - it was HOT)

Preparation: 

Chop all ingredients finely. I used a food processor and pulsed/chopped ingredients separately.

Mix in remaining ingredients. Refrigerate. Adjust seasoning.

***Makes aobut 10 cups. Will keep in the frig for a long time.

Yum, sounds delicious, similar to mine but with cilantro, will give it a try! Then you could always add it to mashed up avocado to make guacamole, bet that would be great!

I never remove the tomato skins in our salsa, or really for anything anymore since eating raw, unless you wanted to simple cut them off without boiling. I love salsa, thanks for posting this recipe :)
