HP Fruity Sauce
I've been craving HP Fruity Sauce to go with my raw burgers for a while now, so came up with this version. It's not completely the same (probably couldn't be without all that starch & refined sugars), but it's very tasty!
(Sorry about the photo. The sauce is a much better colour in real life!)
3 or 4 large tamarind pods (about 4-5 inches in length)
1/2 ripe mango
5 or 6 fresh dates (if you used dried dates instead, soak
them first)
Juice of 1/2 an orange
1/3 cup raisins
1 Tbs apple cider vinegar
Ground cinnamon, cumin, paprika and garam masala, to taste
Break the dry shells off the tamarind pods, & remove the tough veins. Soak the pods in water for a few hours, then press them through a sieve to extract the puree.
Blend the tamarind puree together with the other ingredients, then adjust the seasoning to taste. If it seems too thick, add a little more orange juice or water.
Store in the fridge. The taste improves after a day or two.

You could try extra dates, and maybe a splash or two of Bragg's, but it won't give you the richness you get from tamarind. If you don't mind a little non-raw, you may be able to find pre-made tamarind extract locally.
