A hot and creamy coleslaw which can either be the main part of the meal with some bread or as a side with salad and burgers for example.
½ Medium cabbage, finely sliced
1 teaspoon salt
2 carrots, grated
1 red onion, finely sliced
1 red chilli pepper, finely chopped
½ cup cashews, soaked
1 clove of garlic, peeled
sprinkle hulled hemp seeds
Place the cabbage in a large bowl and sprinkle on the salt. Mix the salt well into the cabbage and leave while you prepare the rest of the ingredients, chucking them on top of the cabbage as they are ready. Add the carrot, onion and chilli to the bowl and then sprinkle hemp seeds all over the top as many as you like. Blend the cashews, garlic and basil together to make a pale green creamy sauce. Pour the sauce over the other ingredients and then mix them altogether thoroughly.
I thought after I had made this that I should have used hemp seeds to make the sauce as well, but it was too late by then!
