I love having this for breakfast, lunch, dinner, dessert, basically whenever I feel like it! This is my favorite raw vegan concept of a banana split! Sometime I also add a handful of spouted and dehydrate buckwheat groats on top when I'm in the mood for something crunchy. This recipe is pretty versitile, so feel free to play around with it and adjust it to your taste,

Ingredients:

BANANA SPLIT
-----------------
a ripe banana
handful of strawberries
raw almond butter
vanilla creme
chocolate syrup

VANILLA CREME
--------------------
2 cups coconut meat
2 tbs. lime juice
3 tbs. coconut oil
1/4 cup agave nectar
1/4 tsp. sea salt
1 tsp. vanilla extract

CHOCOLATE SYRUP
------------------------
2 tbs. agave nectar
1 to 1 1/2 tsp. cacao powder
1 tsp. water

Preparation:

VANILLA CREME - take all the ingredients, put into the blender for 1 minute or until creamy. pour into a container and let chill in refrigerator for at least 30 minutes prior to use (the linger it has to cool the firmer it gets.)

CHOCOLATE SYRUP - put all ingredient into a container, put a lid on container and shake until well mixed.

BANANA SPLIT - 1) split the banana and put the two halves side be side in a bowl. 2) take a dessert spoon and scoop a large dollop of raw almond butter from your jar and place it in the middle of your banana. 3) take one large scoop of vanilla cream and place it on your banana to the right of the almond butter, and repeat with another scoop of vanilla creme on the left. 4) Chop up strawberries and sprinkle into bowl. 5) Drizzle chocolate syrup on top, grab an eating utensil, and DEVOUR! :)

Gastronomic.
I had this for breakfast this morning... feel like a bit of a glut because I had it with some crumbled nuts and banana chips. But wow, *amazingly* good!

2 to 3 young coconuts (depending on how mature they are. more mature, more meat).

This looks great!! About how many coconuts do I need to buy to get the 2 cups of coconut meat, and what kind do you guys suggest?? I've been using the Tahitian young coconuts, but they don't yield much meat. Suggestions?

Thanks!
Misty

8. Great snack and fun to

Submitted by nancyk70 on March 19, 2009 - 10:53am.

Great snack and fun to assemble for the kids. I used hazelnut butter with cacao powder and agave added to make a nutella type nut butter. then the vanilla creme, (no chocolate sauce cause of the nutella) each of my kids choose a different fruit to top it. one had chopped pineapple one had sliced strawberries and the other had blueberries all topped with buckwheaties and a fresh pitted cherry. kids- "AWESOME!"
