Hearty Meat Sauce w. Zucchini Linguine
This was a quick and simple dinner that I whipped together with the remainder of what I had left from the farmer’s market (except the basil – it came from my patio garden). I was so excited with the excellent flavor and texture. I would recommend this dish to beginner raw foodies.
2 Zuchini, Peeled
1 tablespoon Olive Oil
1 teaspoon Sea Salt
5 Basil
Leaf
1 Lg. Tomato
1 clove Garlic
2 tablespoon Sun Dried Tomato
1 teaspoon Sea Salt
For the Linguine:
Peel zucchini and set shavings aside. Cut zucchini length wise into thin spaghetti-like strips. Add 1T of olive oil and 1t sea salt. Place in bowl and put in dehydrator for 1 hr.
For the Hearty Meat Sauce:
In the food processor add basil leaves, large tomato, 1t sea salt, 2T sun dried tomatoes,garlic and the zucchini shavings (meat). Blend until satisfied with consistency. Place in dehydrator for 1 hr.
Serve to meat eaters. I did and mine loved it! He even wanted to name it hearty!

the core is what will make the pasta. the skin goes in the food processor.
