Serves 1, but can easily be doubled or tripled
This is a quick lunch I use when I can’t think of anything else I’d like to have, or when I’m tired of having smoothies for breakfast. It’s also good to make in the morning and take along for lunch, stirring in a drizzle of lemon or lime juice to keep the apples from turning brown.
1 apple, cored
1 pear (optional), cored
1 sprinkle pecans (handful), soaked then dehydrated, or unsoaked
1 celery stalk, cleaned & cut into small chunks
1 dash cinnamon, or to taste
I use my vitamix, but it could also be prepared in a food processor. I’ve used several different varieties of apple, and so far every one has tasted great.
Clean the apple (and pear, if using). I prefer to leave on the skins. Add all the ingredients into the blender and process. The pear makes the mixture wetter and not as crunchy, but a good ripe pear tastes wonderful with the other ingredients. If the apple is small, use two.
Blend at variable speed, around 5 or so. I use the tamper to push down the mixture as it’s being chopped and mixed. Raisins are optional, as they make the blend sweeter. It’s good either way.
My 9-year-old son prefers this with just apple, cinnamon, and a drizzle of agave syrup. The celery and nuts (would be just as good with almonds, walnuts, etc.) give it an Autumnal harvest feeling that I love so much.
