I only had shredded dried coconut on hand, but I’m sure you could make this with coconut water instead of the filtered water and omit the dried stuff. Also, if you like your smoothies to be a little thicker, I’d cut back on the water a little bit.
Ingredients:
2 cup filtered water
½ pineapple, peeled, cored, and chopped into small pieces
1 orange, peeled and
segmented
¼ cup shredded dried coconut
3 kale leaves, deveined and chopped
Preparation:
Throw everything into your blender, and blend until smooth and delicious!

This sounds so amazing! I think I'll get a pineapple and coconut today when I stop at the super market so I can enjoy this one.
