Gingerbread Durian Pudding

Gingerbread Durian Pudding

I absolutely love durian. This recipe would be good as a pudding, make it thicker for an icing or freeze for an ice cream. I’m not sure if the spinach adds to the flavour, I originally added it for additional nutrition and I haven’t tried it without it yet.

Ingredients: 

- fruit from 2 large durian pods, deseeded
1 small hand full of spinach
1 small hand full of raw mixed nuts soaked overnight, ,skins removed from almonds only. I used almond, macadamia, brazil and pecan.
1 medjool date, seed removed
1 slice fresh ginger, approx ¼ teaspoon
2 sprinkle cinnamon
1 pinch nutmeg
approximately ¼ tsp freshly snipped vanilla bean pod
½ to ¾ cup water depending on desired consistency.

Preparation: 

Add all ingredients to a high speed blender & blend until smooth and creamy. I used a ¾ cup of water.
