Get going granola

Get going granola
Servings: 
Makes 8 to 10 - 1/2 cup servings

Crunchy, mildly sweet with bright overtones of citrus. Do not be daunted because of the large number of items for ingredients, this recipe makes a storable amount of granola that can be eaten all week. Can be eaten alone, or with nut milk and fresh fruit.

Ingredients: 

2 cup Almonds, Soaked 8 hours and drained
1 cup Spelt Berries, Soaked and Sprouted for 1 day
½ cup Walnuts, Soaked and germinated
½ cup Raisins
½ cup Dried Cranberries
¼ cup Shredded Coconut
.125 cup Citrus Juice (I like orange, any kind works well), Freshly squeezed
2 tablespoon Agave Nectar or sticky sweetner of choice
1 teaspoon Cinnamon
1 teaspoon Vanilla or 1 Vanilla bean
¼ teaspoon All Spice
1 teaspoon Sea Salt

Preparation: 

1. Day before soak the almonds, walnuts and spelt berries then set out to sprout.
2. Next day add all the ingredients to a blender or food processor and blend until crumbly. Not too much though, just till it is chunky.
3. You can eat it fresh OR I really like to dehydrate it for more of a crunch. About 6 to 8 hours on 95 degrees in the dehydrator makes it more like a grapenut crunch.

Hey mariciesa, I have done that as well, I found my system doesn't take the gluten well either, so I have found other grains that work as well. I have yet to try the Yacon syrup though, I have to give it a shot. Caleb, you can feel free to use whatever grains that you can get. The recipe is meant to be easily switched out for ingredients so if you find all you can get is winter wheat berries or buckwheat, then by all means, switch away. In fact, let me know what you use instead so I can try it too!!!

This is a wonderful combination of spices! I have substituted soaked raw buckwheat groats ( Candace's Apple Granola Recipe- can't eat oats/wheat/gluten ;o() instead of the nuts & spelt and it still tastes terrific. ( Yacon Syrup makes a great low glycemic sweetener too)

Thanks so much for this. I started eating some Ezekiel sprouted cereal for breakfast and then found out today it's not raw, they bake at 250 degrees :( So this is wonderful!! I need more than just a smoothing in the morning so I get plenty of calories! I'm making some tonight. Not sure if I can get spelt berries though, but I'm going to check my local health food store.

You know, I had some dehydrated bananas and apples in (about 1/2 cup of each) along with 1/2 cup of soaked flax seeds and it is delicious.

Ooooh anmanoel that sounds so yummy! I made more last night with oats and pumpkin seeds. It's a good starter recipe and very versatile. Thank you for the compliment.

this is a really good recipe! it's dehydrating right now, but i had to eat some "fresh" for breakfast today, i was starving! to make mine, i used: brazil nuts, sprouted sunflower seeds, sprouted oat groats, sprouted wheat berries, dried cranberries, dried apricots, and raisins. Also, i made some hazelnut milk, which is AWESOME with this granola. YUMMY! :9

Oh thanks Abbeycamp, My hubby is doing low sugar so that is perfect and I never even thought of it. Hi white_orchid, If you went ahead and added maybe a 1/4 cup of ground flax seeds and a bit more sweetner, it could probably be made into a snack bar, just spread it thick onto the sheet and cut into it before it's done. I am going to try it both ways (low sugar and a bar!) because I need a crunchy pick me up. I also think my cockatiel would like the bar idea. I just discovered we eat the same foods lol!

I'm very happy to have helped. I was missing that crunchy good morining to you breakfast and snack item. The best part is, everything is adaptable and changeable. You can use multiple grains in place of the spelt and even change out raisins and/or cranberries for other dried fruits.
