Recipe Directions

1. In a food processor, grind nuts until a roughly even consistency is reached.

2. Mix in coconut flakes and cocoa.

3. Add in honey and process until the mixture turns into an easily moldable goo.

4. Shape these bars as you wish. What’s pictured was packed into a Ziploc, rolled out to look like a thick sausage, and then vaguely squared at the corners.

5. Keep frozen.

This is a variation of Kandace’s recipe, which I resorted to sort of by accident when I wanted to make her delicious-sounding dessert but was missing some ingredients.

Note about honey: This is raw honey, so it’s not very liquidy. Two tablespoons left the dessert tasting just a bit sweet, which is how I like it.

If you want it sweeter, I’d suggest capping the honey at about 2 or 3 tablespoons and playing with agave nectar to your taste for sweetness thereafter, so the consistency is still good.

I’d suggest letting it freeze until it’s pretty hard, because the temperature/texture at least seems to change the taste, but I haven’t figured out if that’s actually a mental phenomenon.

I haven't tried that but I don't see how it could hurt. Kandace's recipe called for agave nectar in place of honey, which I didn't have, and that substitution turned out fine. Raw honey to molasses is probably less of a change in consistency than agave to raw honey anyhow.

This is some good stuff. I made it with cashews instead of brazil nuts and I used agave in place of the honey since I don't consider honey vegan. I also added a little water to get it moist.

You know what? This looks scrummy and I'd love to make it for some friends... Or I would if there weren't any honey in it.

Could mollasses be used instead?
