Fresh Radish Dip in Lettuce Boats

This is a super quick, easy dip/spread. This could be served as a veggie dip, or as a dressing (add a little water to thin.) You could add a little nutritional yeast to the radish dip for a cheesier flavor. I would love to eat this as a sandwich between two slices of raw onion bread, lettuce, brandywine tomato slice, grated carrot and sprouts. Yum!

Ingredients: 

3-4 raw radishes
1-2 garlic cloves
1/2 cup cashew butter (or macadamia)
1/2 teaspoon salt

Finely chop radishes and garlic cloves in food processor. Add cashew butter and salt and mix until combined. Scoop in to lettuce leaf (boat.) Top with desired optional ingredients.

Optional:
sliced tomato
lettuce leaves
grated carrot
sprouts
minced red onion

I misread and put in a whole teaspoon of salt- It's too salty that way so I'll have to give it another go!

This was really great thanks for posting! I didn't have any nut butters so i just put in half a cup of sunflower seeds and some lemon juice. i used it as a tapenade in a sushi roll with carrots zucchini and avocado... mmmmm

I have made this many times now. For toppings, I always use what I have handy, but the tomato is essential to me. It adds such a wonderful amount of moisture to each bite. Red pepper, carrot, and green pepper are all great as well. Yumm!

These were soooo good! I'm a raw newbie and live in a house full of meat lovin' guys. So far, they love everything I've attempted and this was their favorite! I had to fight them for my lunch!
