Forkin' Good Guacamole

I love guacamole with jicama chips, but I was out of jicama while having a perfectly ripened avocado. What to do? Make it "Forkin' Good"! This guac is so hearty you eat it with a fork.

Ingredients: 

1 avocado
2 TBS chopped onion
1 ear corn, shave kernels from cob
1/4 red bell pepper chopped
handful of cilantro
dash of cayenne pepper
few shakes of cumin
(I cheated and added 1/2 can of organic ranchero beans)

handful of greens (I used green and red romaine)

This is all I had (in desperate need of a trip to the store), but I will continue to make my guac forkin' good with whatever I have.

Preparation: 

Arrange the handful of greens on your plate. In a mixing bowl, peel avocado and mash it up with a fork. Add all other ingredients and scoop on top of your bed of lettuce.
Fast. Easy. Filling. Delicious.
