Flax Cherry Chews (Enzyme Madness!)

So I got some juice pulp recipees from goneraw.com, but was still not satisfied, so I went kind of crazy and have been making up recipees with the pulp ever since. This is what I most recently came up with. Best if they stay a little moist and not too crunchy…more chewey..hence the name.

Ingredients: 

1 cup sprouted pumpkin seeds
½ cup Sprouted Sesame seeds
¼ cup Sprouted Flax Seeds
½ cup Sprouted Cashews
1½ cup Soaked Bing Cherries (previously dried)
1 cup Soaked Dates
½ cup Soaked Prunes
¼ lemon juice, squeezed
3 dash cinnamon
4 cup Beet/carrot pulp from juicing

Preparation: 

Soak and spout all nuts and fruit previously. Save carrot and beet pulp from juicing. Add dates (without pits of course, soaking makes the pits come out easier) and prunes to food processor and process until thick and sticky, add some water from the soaked prunes. Combine all ingredients. You want kind of a thick, very moist (not watery though) mixture. Make flat cookie shaped patties and place on the dehydrator. Dehydrate all night (8 hours). If you have a very powerful dehydrator, the point is to keep them kind of chewey and somewhat moist, not stiff nor too hard. I over dehydrated them the first time. Enjoy! Makes a great snack before a good rock climb!

I tried this recipe. I put all the ingredients in the food processor. The taste was interesting. I was taken aback by the beet. It seemed strong but after the second cookie, I really liked the cherry/beet dynamic. The sesame seeds added a nice touch.
