Part 1: Guacamole

Ingredients

• 1 avocado, mash with fork • Handful cilantro • ½ jalapeno pepper, whole for more heat • ½ tsp salt or nama soyu • ½ lemon juice • Pepper, pinch

Mash avocado leaving some chunks if preferred. If smoothness is preferred, definitely do the monster mashing! It’s a workout. Add the rest of the ingredients and mix well. Set that aside.

Part 2: Base Cheese

Ingredients

• Rejuvelac or pro-biotic • Cashews, soaked overnight • 1 tsp dark unpasteurized miso • 1 tsp salt

Place in a blender the ingredients and mix until smooth. Pour into a cheese cloth in a spring pan allowing some type of draining mechanism and fold the cheese cloth to cover the cheese. Put a heavy tupper ware with water on top of the cheese. Let is set overnight. You will notice liquid drains into the pan the next day. Remove cheese and place it in a bowl.

Part 3: Mock Cheddar Cheese

Ingredients

• 1 cup base cheese • Jalapeno (optional) • 2 tsp Nutritional Yeast • 1 tsp tumeric • Drinking water

Mix until ingredients are all incorporated. Add water a tablespoon at a time until you get a rich, saucy consistency. Set it aside. Don’t forget to lick the spoon.

Part 4: Assembly

Ingredients

• Sprouts • Romaine lettuce • Kale • Tomatoes • Carrots • cilantro

Get salad ready by placing all ingredients in a large plate. Have fun with making it presentable. Put some of the guacamole then pour the cheddar cheese on top.

hi jem, congratulations on your first triathlon - you rock and a huge goal! Don't attempt, do it! Believe in yourself!

I will try to post the cheese balls this week. take care and remember baby steps goes a long way. don't be so hard on yourself because it is a journey - enjoy the failures and success. if it's not fun - not worth doing it

JEM, it took me over two years to get to this point...it takes a while for your palate to adapt to eating just raw food so don't be tough on yourself. You are doing something incredibly good for your precious body - the only one we got right? Everything we do is connected to our bodies.

Start slow and it will go a long ways. You make a boo-boo, forget it and move on to re-focus again - don't look back at what you did.

It looks like you are doing the right thing by doing your research. You will be able to make these recipes, I believe that...again start with baby steps and learn the basics first before diving into the hard stuff - I know my recipes can be a bit difficult but I try to break it down into parts to kinda simplify...oy.

Don't worry keep at it and you will get there!

Thanks chef, if I can get myself to actually do these recipies and consistenly be raw that would be a great accomplishment to me. I want this soooooo badly but don't understand why I am having a hard time "sticking" to it. I love this site and know just as I had to "train" myself to work out, I can do the same with raw or anything for that matter.

I did this when I posted my first recipe! I just appreciate the time and generosity it took to post. Your pictures are gorgeous. I'm not the one who took a star away from your rating. I actually think that process should be removed. I don't think it's beneficial.

Your recipes sound great, but they would be easier to follow if they were put in the correct format.
