Fettuccine Alfredo
Servings:
Serves 4

The BEST Fettuccine Alfredo I have EVER tasted. Tastes so much like the real thing. And to think I made it by mistake!

Ingredients:

1 bag Kelp Noodles, Rinsed
½ cup Cashews
¼ cup Pinenuts (Pignolias)
¾ cup Water
2 dash Basil, (Dried or fresh)
1 pinch Sea Salt
1 pinch Pepper

Preparation:

1. Blend all ingredients in blender (except kelp noodles).
2. Pour sauce over noodles.
3. (OPTIONAL) Let noodles marinate in sauce for a chewier, more noodle-like texture and a more Fettuccine-Alfredo-like flavor. YUM! :)

the site mentioned above will send individual packages... i just ordered mine. However, i haven't gotten them yet and i faxed payment/instructions over a week ago. I can't wait to get them. I'm making this sauce tonight to put over carrot noodles - it's what i have here :) I have to go grocery shopping!

I tried the sauce with zucchini, the zucchini threw it off a bit. The sauce was amazing. I need to order the noodles from rawguru.com so I can enjoy it more!

hanna750, sorry it took so long. The name of the store is Life Grocery and Cafe, Roswell Rd, 1/2 mile of the big chicken. They sell them in individual packs around 4 bucks. Good luck.

This was so good. I couldn't believe it was dairy free. I'm going to make some more this weekend, next time I will add parsley and sun dried tomatoes. Thanks for the wonderful recipe.

I am not sure if other brands of kelp noodles are raw but I know Sea Tangle's noodles are raw. I got a case of 12 plain ones (they sell green tea ones) because they are so delicious. Here, these are FAQS from Sea Tangle including the raw question. http://www.kelpnoodles.com/about_us_faq.html Thanks for all the great comments guys!

I have to try to find the name of the store, give me a minute. I know the store was not Asian, it was a health food store. I'll try to post it by this weekend.

Just made this for dinner. I couldn't believe I wasn't eating dairy!!! I like my kelp noodles softened by the lemon or garlic I usually put in alfredo sauce, but this was so good that I kept eating it with crunchy kelp noodles so I wouldn't ruin the sauce! :)

Yum - thanks! I have always done mine with sun-dried tomatoes in the sauce, but I'm in the mood for just alfredo this weekend...

Ok, if you can find them in Marietta Ga, I should be able to find them in Dallas, TX!!! I will have to check the Asian markets. However, I don't mind the cost of a case, they are pretty inexpensive, I was worried about not liking them and being stuck with a case! I will trust all of you and just go for a case if I can't find them at the market. Thank you!

I live in Ga and had to search high and low for Kelp noodles. Finally found them in Marietta Ga. They are suppose to be raw, if you buy them over the internet you can only buy them by the case. They are clear and tasteless. I usually soak mine overnight in the refrigerator then mixed them with some sort of sauce with veggies. I like them alot. They can be used in a variety of ways. Good luck finding them, maybe you can find someone on the site who is willing to split the cost.

Kelp noodles rock. Lucky me has them right where I shop. According to the packaging on the ones we buy, they claim to be a raw product, and are sold in the raw section of our health food store. They have the consistency of a noodle, and a very mild flavor. They basically make they perfect noodle. There are several places online where you can buy them in small quantities for trying out. But I'll tell ya - we like them so much we always buy several packs at a time at the store!

Alright so Kelp noodles are apparently the most rare grocery item in the universe. I live in Austin, TX, Whole Foods World Headquarters and I can't even get them here. What's the deal? Do you guys order them online or something? I just really don't need a whole case of something I have never even tried. Well, I look forward to the day when I can sample these beautiful noodles. Until then, seaweed and zucchini are fine by me I suppose.

Looks beautiful natural_vegan.
