Emerald Kale Salad

I could live on this kale salad and be one happy camper!

Emerald Kale Salad

Ingredients: 

2 heads kale
1/4 cup olive oil
3 T. sesame oil
1/4 cup nama shoyu, soy sauce or tamari
3 cloves garlic, minced (I love garlic so I use 10 cloves!)
1/4 cup sesame seeds

Preparation: 

Wash kale and break into bite size pieces. Place kale pieces into sealable container with both oils. Shake container HARD to bruise kale. Add tamari, garlic and sesame seeds. Shake a bit more and eat.

This is a very addicting salad. I actually make a triple recipe and eat it all by myself over a three day period (til it would go bad).

Enjoy!

p.s. I use the curly kale. It is tough, but that makes it hardy and able to withstand days in marinade. It is very easy to chew once marinated.

I love this salad but made a mistake by wilting the kale first with sea salt which made it way to salty for my taste. Next time, I'll follow the recipe as is.

Tried this recipe today and fell in love with it. I think I could eat this everyday. I ended up making my first batch with toasted sesame oil (all I had), hulled hemp seed, instead of sesames (also all I had), lemon and avocado (as suggested by Maryssa), as well as a small handful of nori flakes. Was sooo yummy. Went to the store immediately after and bought two more bunches of green kale to make a nice batch to have for the next few days. My new fave. Thank you for this recipe :) <3 MW

7. I actually add a teeney bit

I actually add a teeney bit of "toasted" sesame oil to the olive oil and cold-pressed unrefined sesame oil. It DOES give it an incredible flavor. Since it is so strong you only need a teeney bit of the toasted to get that lovely asian flavor.

I do a similar massaged kale salad, it's fantastic! I use toasted sesame oil (I know, not raw, but so good), and lemon juice or ACV, in addition to the olive oil and nama shoyu. It's amazing with diced avocado too. I'm going to take your tip of making a 3-day supply, I'm always sad when it's gone! PS. You can also try this with mustard greens, pretty tasty ;)
