Elvis' Banana Nut Butter and Jam Parfait
“Can’t Help Falling in Love” with this “a hunk, a hunk of burning love” parfait.
BANANA CREAM
1 ripe banana
½ cup cashews, soaked, 1 hour
.125 cup
agave nectar
.125 teaspoon sea salt
CHERRY JAM
½ cup dried cherries, soaked until soft
.125 teaspoon sea
salt
NUT BUTTER
½ cup almond butter
.125 cup honey (or agave nectar)
pinch of sea salt
1 banana, sliced
BANANA CREAM: Whip ingredients in a blender until smooth and creamy. Refrigerate for 1 hour.
CHERRY JAM: Liquefy in blender until syrup consistency.
NUT BUTTER: Combine ingredients in a bowl.
To assemble, place 2 banana slices in the bottom of a parfait glass, place 1 tablespoon nut butter on top then cherry jam and banana cream. Continue to layer until you reach the top and end with bananas. Chill for an hour.

I just made this! Very good... i used dried fig and apricot for my jam and i made a raw dark cacao sauce and put on the very top....Mmmm... good stuff!

I have to send this recipe to my mom... She's a HUGE Elvis fan (actually fan is sort of an understatement) she's partially raw and I've been working hard on getting her to enjoy raw more than cooked foods.. but I think alot of her issue is that raw seems to have more prep work.. This one should be easy for her though...
