This mini (and easy!) version of a pizza will quickly and simply satisfy your pizza cravings. The Eggplant easily subs for bread or crust recipes.  

Recipe Directions

1. Topping: In a bowl, mix all ingredients except the Eggplant.  I used Grape tomatoes, but the roma variety would be equally as tasty. 

2. Be sure to peel the eggplant thoroughly, as any remaining peel will add a hard-to-chew texture around the edges.

3. Spoon topping onto eggplant rounds. If you want to get creative, make up a faux cheese recipe and drizzle over the pizza before you dehydrate.

4. Dehydrate at 118 (or desired temp) until eggplant becomes crispy around the edges (about 8-12 hours).

Yes, they are delicious - they were even a big hit at a non-raw carry in I recently attended! I love that :)

These were fabulous. I only used 1/2 of an eggplant and cut everything else back to have enough topping. I had quite a few though because they were sliced nice and thin. Will be making these from now on. Thank you!

Actually I left these in for 12 hours at 114-115 and they were amazing. They are like little pizza chips, so I get the cruncy I am looking for with the pizza flavor, So good!!! I absolutly love them, I did not care for them when they were chewy at all, But it is totally up to personal preference, At any rate thank you Kyko. I have to make more now!! :-)

Hi Folks, I've tried this recipe - twice. The pizzas are very good. The first time, though, I used dried basil - don't do that. And don't leave it in the dehydrator too long, either. The second time I used fresh basil and only dehydrated for about 6 - 8 hours. Much better. Thanks for this recipe.
