Good thing to know omshanti. :) I love eggplant also. I have one in the fridge to try out the "bacon" recipe...

This is also a great way to prepare eggplant for babaganoush...just omit the marinara and use garlic, parsley, lemon instead.

This sounds so good! Thanks for sharing. I think the way you prep. your eggplant prior to putting in the dehydrator would make a nice "pizza crust" too!
