Eggplant bacon

This bacon taste and looks very similar to bacon (like the veggie substitute by morning star). It's salty, spicy, and sweet. It takes forever to get crispy but very dry is still excellent simply tear into bite size pieces and add to sandwich.

Ingredients: 

1 Eggplant medium peeled, thinly sliced
½ Tbsp salt
1 ½ Tbsp Agave Nectar or Maple Syrup
2 Tbsp Soy Sauce or Braggs Liquid Aminos
2 Tbsp Apple Cider Vinegar
1 tsp Chili Powder
½ tsp paprika
½ tsp cumin powder (opt)

Preparation: 

In a mixing bowl, add all ingredients except the eggplant and whish until thoroughly mixed. Add the eggplant and allow it to marinate for at least 30 minutes. Dehydrate eggplant on 105 degrees until completely dry (12 hours or more)

DELICIOUS!!! I ate them more as chips than bacon and they were so good! By the way, does anyone has any idea of how many calories the whole recipe has? Just wondering.. thanks!

I haven't tried his recipes, but I have heard of him. I was inspired by other raw recipes, but this was a winner for me. I love it as a snack too. I hope you like it.

I tried Mattew Kenney's version of this before and it turned out... ok... looking forward to trying yours.
