Easy Celeriac Mash

Makes approximately 2-3 cupsI was inspired to create a this recipe after a discussion of this wonderful root in a forum discussion. Thanks for the challenge!
Ingredients:
1 celeriac root, peeled and cubed
¼ cup sunflower seeds
1½ tablespoon olive
oil
1 teaspoon coriander
¾ teaspoon salt
1 clove garlic (optional), chopped
Preparation:
Grind sunflower seeds in food processor until fine
Add 2 cups of cubed celeriac root and the remainder of ingredients. Process/grind until sufficiently “mashed”. Most likely, you will be able to make a second batch if you have a small food processor (like I do), as celeriac roots are pretty large. If you have a large FP, double the amounts of all ingredients and go!

You're a sweetheart, dodo. Giving up the fish won't be a too big deal as I hardly ate it since going raw. I always felt guilty about eating it anyway, even though I didn't know about what "overfishing" actually meant. I fully agree that every bit does count; look how much we've learned from each other on this site...and knowledge is power! Hope you enjoy the recipe.

i shall be trying this as soon as my celeriac plump up a bit, thank you. congratulations of giving up fish by the way mon, every person that does there bit makes a massive difference, even tho we might feel small sometimes we are huge! :P

Not like hummus--a little more "chew" to it. Though if some liquid were added and more time was spent in the FP, it probably could be creamy.

RCBAlive, I think you could probably try it without the sunflower seeds, although they add a nice consistency (a little chunky), or just add a little less olive oil. My concern is that if you cut out both, it would just be a little too grainy. It's worth experimenting, though.

Hey Mon, I would like to try your recipe as a lower fat version by using either the sunflower seeds or oil, but not both. How do you think it would taste? Does this recipe come out creamy or chunky? Thanks for the recipe.

Actually didn't think of that. Most gravies I've seen are made with mushrooms, and I'm not sure how that flavor would pair with celeriac. Maybe there is a creative chef out there who could come up with an idea!
