Down to the Roots with Kale by my side

Servings:
4I wipped this together one evening to go with the mock salmon patties.
Turns out i like to have it as a meal alone :)
Enjoy
Ingredients:
2 Bunch Kale
2 Carrots - Shredded
1 Beet - shredded
1/4 c olive
oil
1/4 c agave
juice of 1 lime
pinch of salt
One large handful of sunflower sprouts
small amount of pinenuts
Preparation:
Chop or process kale - however you prefer. i like it chopped, that way the kale doesnt get mushy
pour olive oil, lime, agave and massage
kale
Shred the carrots and beet, add to bowl
add sprouts and pinenuts
Mix and Enjoy

I do something similar, but I spiralize the beet and carrot (or any other hard vegetable, like radish, turnip, or parsnip) and add to the kale before I massage it.
