Makes a big mixing bowl of salsa, enough to save and munch for daysCrunchy, sweet, colorful salsa with lots of green. We had it with raw tamales and raw mole sauce. Added the walnut taco “meat” from this site inside the corn tamales. It was amazing tasting!
Ingredients:
1 small jicama, peeled and diced small
1 mango, peeled and diced small
1 ear sweet corn, kernels cut off the
cob
6 green onions, thinly sliced
1 cucumber, diced small
3 cloves garlic, minced
1 bunch cilantro, chopped
small
5 medium tomatoes, diced small
1 red pepper, diced small
1 lime, juiced
2 avocados, diced small
1
jalapeno, minced
3 tablespoon olive oil
sea salt
Preparation:
Immerse the avocado in lime juice, coat to keep from browning.
Mix everything together, season to taste with salt.

I can...do you have the ritzy raw cookbook "raw food real world"? That's where I got the recipe from, but I didn't dehydrate mushrooms. Rather, I marinated them and added them diced small to the taco meat. I put about a half cup of the corn/nut filling and a few tablespoons of the taco filling in. When I have time later I'll post the tamale recipe.
