To Die For Fettucine Alfredo

This is from Chad Sarno's pasta trio.. I am experimenting with texture on the zucchini (courgette) pasta, but the sauce is soo satisfying.. more of a comfort food than I ever remember pasta being! Would be great to find a way to make this less fatty, but that might be the bread and butter of it.

did you take this beautiful photo? makes me hungry, and i haven't had pasta in forever. i have never been able to master the zucchini pasta, any tips? and i would never have even though of using coconut for a pasta. so what's the 3rd in the trip? am i just missing it?

This is great! I didn't have truffle oil, but I added fresh rosemary and marinated mushrooms to the blender. Mmm, mushroom alfredo! I also didn't use coconut meat, just the zucchini noodles. How do you think they got the noodles to look so pretty in the picture?

I think I've found dinner for tonight, this looks great! Thanks for the suggestion of using the other olive oil in place of the truffle, I have rosemary at home and will try that until I can get some truffle oil.

What do you do with the thinly sliced coconut meat and shallots , add them to the courgette noodles or put them in the blender???

Providence, this looks yummy. I do so miss certain alfredo dishes. Just a small suggestion here. You might want to begin your Preparation instructions with something about preparing the "pasta" and setting it aside. Then continue with the alfredo prep directions. Sometimes we read directions so literally.
Courgettes are the same as zucchini (a green squash), right? Do you think yellow squash would work as well?
