Delicious Apricot Sandwiches

Delicious Apricot Sandwiches

These are exceptionally good! The first time I made them I set them on a plate outside in the afternoon and they were gobbled up in no time by non-rawers! Even the birds wanted a taste :o)

Ingredients: 

Filling:
1 cup dried apricots (soaked 10 min)
1 fresh ripe pear
Coating:
1 cup coconut flakes (ground into powder)

Preparation: 

For the actual sandwiches, I used a recipe on here by Nyuszi called “Peanut Butter Sandwich cookies” found at http://goneraw.com/recipes/3103-Peanut-Butter-Sandwich-Cookies
And wow, they turned out great! Thanks Nyuszi!!

For the filling, combine the apricots in your food processor or a blender and keep adding a slice of pear until you reach a jam consistency.

When your sandwiches are done, brush the tops of them with raw honey or agave nectar.

And for the powdery topping, I just put about a cup of coconut flakes in my coffee grinder and made it into a powder. Sprinkle over each sandwich.

Eat right away or save for later!

These look great. I don't use peanuts though so I'll make the biscuits using other ingredients.
