Cucumber Sesame Salad

I love Thai food and especially the cucumber salad I used to get with my meal. This is a replica of that salad. The rice wine vinegar gives it a great tart flavor. Adjust the seasonings to taste.
Ingredients:
2 Cucumbers, seeded and sliced
½ red pepper, julienne
½ red onion, thin
sliced
2 scallions, bias cut
1 carrot, julienne
3 tablespoon rice wine vinegar
2 tablespoon limejuice
2
tablespoon olive oil
2 tablespoon sesame oil
1½ tablespoon Agave
Salt to taste
Preparation:
Combine all the dressing ingredients (Rice wine vinegar – salt) and pour over the sliced cucumbers, onion, red pepper, scallion and carrot. Mix and let sit for 1/2 an hour, top with sesame seeds and eat!

This is good. I will make this again. I added a few red pepper flakes for heat.

I love Japanese cucumber sesame salad, so I'm happy to have this recipe! Now I can make this yummy salad myself! I don't eat vinegar, so I'll use lemon and/or lime juice instead. Thanks!

Oops. I was editing that, and somehow it clicked on 'leave comment'. I was going to say that I am inspired to experiment with a version of my own (cukes, apples, onions, red peppers, perhaps grapes and sprouts..). We shall see. Thank you for this lovely recipe :)

Made this today. It was syummy!! Loved how the cucumbers became all flimsy and slimy..mmm... I with cukes, apples, onions, red peppers. Also, maybe some grapes and sprouts would really liven it up a bit. All in all: Delicious!!!

Just made this, and my fussy daughter actually likes it. A good way to use up the cucumbers from my friends garden.
