Ingredients
3 ears of corn
1 yellow bell pepper, chopped
1 red bell pepper, chopped
2 tablespoon Apple cider vinegar
4 tomatoes, sliced
½ teaspoon garlic, minced
½ teaspoon cumin
¼ teaspoon cilantro, chopped
¼ teaspoon sea salt
.125 teaspoon black pepper
1 medium cucumber, chopped
½ tablespoon red pepper flakes
Recipe Directions
In a large bowl, toss together the cucumber, corn, tomatoes, yellow bell pepper, red bell pepper, and apple cider vinegar. Season with crushed red pepper flakes, garlic, cumin, cilantro, salt, and black pepper. Cover, and chill at least 30 minutes before serving.
Note: This is spicy. If you’d like it milder, cut back on the red pepper flakes.
