Cucumber Basil Pesto Soup
This was inspired by a cucumber cilantro soup
1 large cucumber, chopped
1 avocado, pitted and skinned
handful (or so) of basil
1 large clove garlic
2 tsp agave
2 tsp apple cider vinegar
1-2 tablespoon fresh lemon juice
1-1/2 cups hot water
sea salt
and pepper to taste
OPTIONAL CUCUMBER GARNISH:
1/2 cup diced cucumber
4 button mushrooms, sliced
1-2
tablespoons balsamic vinegar
1 tsp agave
sea salt
pepper
Blend all ingredients in a blender until smooth.
For the garnish, stir all ingredients together in a small, shallow bowl/cup and let marinate before hand for 20 minutes or so, at least. Drain the vinegar mixture from the cucs and mushrooms, and use the cucumber and mushrooms to garnish your soup :)
This whole thing would also come together beautifully with crushed red pepper

This sounds nice, although I'm not a massive raw soup fan. I can imagine a thicker version would be nice on zuchinni pasta.
