Recipe Directions

1. Cut kernels off of the ear of corn, and chop the celery and pickles into small pieces (about the size of the corn kernels).

2. Toss the greens, corn, celery, and pickles in a bowl.

3. In a small bowl, mix the tahini, vinegar, generous squirt of agave, salt, and pepper with a fork until blended. Slowly add filtered water until you get a nice, creamy texture. Taste, and add more salt or pepper if you like. It should have a tangy, almost yoghurt-ey taste.

either: 4. Take a sheet of nori, and spread some dressing on it (generously!) with a spoon. Pile on some of your chopped salad, roll up, and eat! Dip in the leftover dressing.

This sounds awesome. I get alot of organic corn from our community farm in the summer and was wondering what I'll do with it raw. Thanks for the great idea!

Orgfoodaddict,

If you're having trouble rolling up nori, I'm wondering whether you are using a mat. They help a lot.

Also, keeping the amount you roll up small is a good way to go.

As for difficulty chewing, I personally like nori rolls cut up into nice bite sized pieces, thi may help.

I tried this out tonight- I had cut up my own baby greens and had to substitute daikon for the pickle. Everything else was the same- I had a very hard time rolling up the nori correctly so none would fall out and I would recommend one double the amount of tahini to have enough to go around. Also, maybe its just me- but the nori was a bit difficult to chew- since it had not been toasted but..

Thanks buffalo!! I tried green smoothies a few times before, but can never get them down, since I can't get the greens broken down enough that I don't have to chew them. (>_

...I just read your profile- congradulations on your pregnancy! I have a 15 month-old, and though I was vegetarian through my pregnancy, wish I'd known as much as I do now about raw food. To help your cravings, maybe try green smoothies a couple of times a day. They help me tremendously. Banana, romaine, spinach etc. & water. Add some ginger for digestion, tahini for protein...Great luck!
