Crumble and Custard

Serves 2-3

Light sweet crumbly dessert with smooth custard perfect for Spring/Summer

Ingredients: 

1 cup white sesame seeds
1/2 cup dried coconut flakes
6 dried apricots or dates

1 small mango
2 bananas
1 inch vanilla pod
pinch sea salt
2 teaspoons lucuma
water

Preparation: 

CRUMBLE
Soak the dates or apricots in warm water for 5 minutes. Strain
Grind up the sesame seeds and coconut and place in the food processor.
Process the fruit with the seed/coconut mixture into breadcrumbs.

CUSTARD
Peel and chop the mango and add to the blender.
Add the bananas, salt, vanilla and blend until smooth
With the blender running, add the lucuma to thicken into desired custard consistency.
Pour over crumble and enjoy!

I haven't seen lucuma for sale where I am. Should I omit it entirely or try to replace it with another ingredient? What sort of flavour does it add - rich, spicy, sweet, etc? Would it be okay if replaced by something like agave or carob?

edit: Upon re-reading the recipe, I see you use it as a thickener. Should I use some psyllium or blended flaxseed?
